a "moving in together" cake!

last month BOk had an online auction where all the proceeds went to united way. i donated a cake and the highest bidder got a custom cake for a special occasion. the girl that won wanted to give a cake to her boyfriend to celebrate them moving in together -- what a cute idea! this is definitely one of my favorite cakes!

rice krispie treat cake!

for my boss's birthday this year i thought i'd put a fun spin on an old favorite. so, i made rice krispie treats and pressed them into a 10" springform pan while they were still warm.



rice krispie treats:
  • 12 cups rice krispies (1 lg. box is enough)
  • 6 tb. butter
  • 1/2 tsp. salt
  • 20 oz. mini marshmallows
melt butter & salt together in a large saucepan. stir in marshmallows over low heat until completely melted into butter. pour in rice krispies & stir until combined. press into greased springform pan while still warm. i had to spray the back of a spoon with nonstick spray in order to press them in without making a huge mess. allow them to cool.


meanwhile, i made up a quick batch of chocolate ganache.

chocolate ganache:
  • 3 cups chocolate chips (a mixture of milk chocolate & semi-sweet is best)
  • 2 cups heavy cream
  • 1 tsp. pure vanilla extract
melt together in a double boiler until completely combined. remove from heat, add vanilla and let cool to pourable consistency in the fridge. (about 45 minutes.) pour over cake and smooth over edges. i did this over a cookie rack with foil underneath to catch any drips.





you would never know there are krispie treats inside! i can't wait to cut into it tomorrow.

homemade blueberry muffins.

  • 1/2 c. old fashioned oats
  • 1/2 c. orange juice
  • 1 large egg
  • 1/2 c. canola oil
  • 1/2 c. sugar
  • 1-1/2 c. all-purpose flour
  • 1-1/4 tsp. baking powder
  • 1/2 tsp salt
  • 1/4 tsp. baking soda
  • 1/2 pint (1 cup) fresh blueberries
  • cinnamon & sugar to sprinkle on top
preheat oven to 400. in a large bowl, combine orange juice and oats and let sit for 5 minutes. meanwhile, combine dry ingredients (flour, baking powder & soda, salt) and set aside. beat the oil, egg and sugar into the oat/oj mixture until combined. mix in the dry ingredients until it has just come together (don't overmix.) gently fold in the blueberries. line a 12-ct muffin tin with papers and fill each 3/4 full. this makes exactly 12 muffins. sprinkle the tops with cinnamon & sugar and bake for 20 minutes. let cool 5 minutes before serving.

hi. we moved!

we just bought a new house in edmond... and we are loving it! all that is left to do (ha-ha) is paint a couple walls and our new wood floors go in next Monday... it is so much fun! and of course, the most important room in the house...

a baby story!

my friends dale & jen are having their first baby! last tuesday they went to the dr. to find out the sex... but they didn't let the dr. tell them. he wrote down "it's a ....!" on a sheet of paper and slipped it into a envelope and sealed it. after their appointment they came by the bank where i work and dropped off the envelope to me (aaaah!)

i made it about 2 hours before taking a peek.

you may be wondering why i got to find out first... here comes the good part!
dale & jen were planning a party with their family & friends that friday night where they could share the exciting news of the baby's sex with their loved ones (keep in mind, they still don't know either!!) - they delivered the news to me so that i could bake a cake and color it pink or blue; depending on the sex of the child and when they cut into it at the party, everyone would find out together! (i am getting goosebumps for the 1000th time while typing this)

so i baked a cake, a very SPECIAL colored cake and frosted it bright white with question makes all over...
