pineapple upside down cake recipe



i can't take credit for this recipe, i found it online! but it is really delicious, i couldn't keep it to myself.

2 layered pineapple upside down cake

  • 1 yellow cake mix
  • oil & eggs as cake mix calls for
  • pineapple juice (appx. 1 cup, depending on your cake mix)
  • 1 8 oz. can pineapple rings (4 rings), drained
  • 1 8 oz. can crushed pineapple
  • 1/2 cup brown sugar
  • 1/2 cup sweetened coconut flakes
  • 4 tbsp. unsalted butter, melted
  • maraschino cherries
spray two 9" nonstick round cake pans with non-stick spray. put 2 tbsp. of the melted butter into each pan and distribute evenly on the bottom of the pan. sprinkle 1/4 cup brown sugar in each pan on top of the butter. sprinkle the coconut flakes in one of the pans. in the same pan as the coconut, lay out the 4 pineapple rings and place a cherry in the middle and around each. spoon out the crushed pineapple into the bottom of the other pan.

prepare the cake batter as the box calls for, replacing the water with pineapple juice. remember which cake round the pineapple rings are in, and pour the batter on top of the previous ingredients, evenly dividing the batter between the 2 pans.

bake at 350 degrees until cake batter is set and a toothpick comes out clean, roughly 30 minutes. turn out the layer with the crushed pineapple on your final serving dish, then turn out the layer with the rings on top. i made this cake a day ahead of time and by the time i served it all the flavors had mingled together and it was extremely moist.

cookie cake.

i heart... soup?

since i got my new sexy blender (see below)... i've been trying out some new hot blended soup recipes. this one is a winner! really yummers and the more cheddar cheese you add... the better it gets. the recipe is from cooking light so it's a great one for the health conscious reader!


creamy broccoli soup.


  • 2 tbsp margarine, butter, low fat spread... whatever you prefer
  • 1 small yellow onion, chopped
  • 14 oz. chicken broth (1 can)
  • 1 cup 2% milk
  • 1 package (appx. 14 oz) frozen broccoli florets, thawed (zap in the microwave for a few minutes)
  • ground black pepper
  • salt
  • 1/2 cup shredded cheddar cheese (or more.... mmm)

melt butter or the like in a 4 qt. saucepan and cook onion for about 5 minutes, stirring occasionally. stir in chicken broth and milk. bring to a boil over low heat and simmer about 5 minutes or until broccoli is softened.


process the soup, in batches if necessary, in the blender until smooth. return the soup to the saucepot and stir in the shredded cheese, a little at a time. season with salt and pepper to your liking (i used quite a bit of salt... because i like it that way!) garnish with additional shredded cheese.

believe me when i say... you have got to make this cake!

i based this cake off a delicioiusly moist margarita cake i tried at williams-sonoma last weekend. it's seriously good, and really moist!



passion fruit cake
  • 1 yellow cake mix (i used pillsbury moist deluxe- i think its the best)
  • eggs & oil as cake mix calls for
  • 1 can welch's juice concentrate - tropical passion flavor (found on the juice aisle)
  • 1 & 1/2 cups powdered sugar
preheat the oven according to the cake mix.

prepare the cake batter as the mix indicates, replacing the water with the juice concentrate. [dilute the juice concentrate a little so the flavor isn't as strong, i used 2/3 cups concentrate to 1/3 cup water. ]

bake cake according to directions on the box, the bundt pan worked great, but you could use a 13x9 dish if you want. after the cake has baked, turn it out onto whatever you plan to serve it on, and poke it all over with a skewer or toothpick.

slightly dilute the remaining juice concentrate with water and add about 1/2 cup of that to the powdered sugar to create a glaze. you can make it as thick or runny as you prefer... just add until the flavor tastes good to you. pour the glaze over the perforated cake while its still warm, and let it soak in.

i can't wait to take this cake to work and let everyone try it, hope they don't mind that a big piece is missing! :)

a new spin on neiman marcus brownies.

i was in an inventive mood tonight and decided to switch up my mom's classic neiman marcus brownie recipe. these are decadent... as expected! serve with plenty of milk :)

oreo neiman marcus brownies
  • 1 devil's food cake mix
  • 3 large eggs
  • 1 stick butter, unsalted
  • 1 block cream cheese
  • 1 lb. powdered sugar (1/2 bag)
  • appx. 20 oreo cookies, broken into small-ish pieces
  • 2/3 cup semi-sweet chocolate chips

preheat oven to 350.

melt butter and mix into cake mix with 1 egg. press chocolate mixture into a greased 13x9 dish. sprinkle oreo cookies on top of chocolate crust.

beat cream cheese, powdered sugar, and remaining 2 eggs until fluffy. pour over oreos and smooth out to cover surface. bake at 350 for 50 - 60 minutes, until top is lightly browned. after pulling brownies out of the oven, sprinkle the chocolate chips on top and let the heat of the brownies melt them. use a spatula to spread out the chocolate once its melted.

today is my little scooter man's 3rd birthday... wow! i am home sick today, so lucky for him he has some company... stay tuned for pictures this weekend -- we are bound to celebrate!

in loving memory.

last night my family's precious baxter suffered from a blood clot and had to be put to sleep to keep him from suffering. we will never forget him and nothing could ever fill his place in our hearts... he was truly one in a million.
