creamy broccoli soup.
- 2 tbsp margarine, butter, low fat spread... whatever you prefer
- 1 small yellow onion, chopped
- 14 oz. chicken broth (1 can)
- 1 cup 2% milk
- 1 package (appx. 14 oz) frozen broccoli florets, thawed (zap in the microwave for a few minutes)
- ground black pepper
- salt
- 1/2 cup shredded cheddar cheese (or more.... mmm)
melt butter or the like in a 4 qt. saucepan and cook onion for about 5 minutes, stirring occasionally. stir in chicken broth and milk. bring to a boil over low heat and simmer about 5 minutes or until broccoli is softened.
process the soup, in batches if necessary, in the blender until smooth. return the soup to the saucepot and stir in the shredded cheese, a little at a time. season with salt and pepper to your liking (i used quite a bit of salt... because i like it that way!) garnish with additional shredded cheese.
