my friend katie graham opened a lash studio here in edmond -

is the logo not the cutest thing ever?

she had an open house with a ribbon cutting ceremony and hired me to make 75 cupcake pops to hand out at her event. i was honored! luckily candee came over to help the first night- love you candee!

she had the cutest stickers made with her logo so i made tags out of scrapbook paper, stuck on the stickers and tied them on each pop with ribbon.

this is a seriously delicious & EASY trifle recipe! wendy brought it over and we gave it a go for our family get together. it's a keeper! plus, you could use whatever fruit is in season! thanks, wendy, for letting me shove my camera in your face and all over the dish for my blog post.

red, white & blue truffle:

16 oz. cream cheese, softened

2 c. heavy cream, room temperature

1/4 and 2/3 c. granulated sugar

1/4 c. water

1/4 c. fresh squeezed lemon juice

1/4 tsp. pure almond extract

2 pints fresh blueberries

2 pints fresh strawberries, sliced

1 regular angel food cake, cubed

first, beat the cream cheese and 2/3 c. sugar together until smooth and creamy. then beat in the heavy cream until the consistency is like whipped cream. store in the fridge while you are preparing everything else.

in a small saucepan over medium heat, stir together the 1/4 c. sugar with 1/4 c. lemon juice and 1/4 c. water until the sugar is dissolved. remove from the heat and stir in the pure almond extract. set aside.

layer half the cubed angel food cake in the bottom of the trifle dish.

then, dab/drip/drizzle {however you like it} half the lemon mixture over the cake cubes with a pastry brush until they are moist.

top with half of the blueberries. make sure they get into all the nooks & crannies.

top the blueberries with half the fluffy cream cheese mixture. i'm drooling. thanks wendy the hand model.

layer half the sliced strawberries on top of the cream mixture. {we may have snuck a little sugar on to the strawberries, JUST for good measure}

repeat the layers. cake, lemon mixture, blueberries, fluff, strawberries. or, if you're like us and are using a mini trifle bowl, cram as much of the remaining toppings as you can in the bowl and then dollop a huge pile of the cream on top :)

see, the dollop fixes everything.

refrigerate until youserve, so all the flavies can mingle.

don't forget to dish a little helping for yourself. you know, to make sure it isn't poison.

yummmm!

i was terrified to try my first german chocolate cake... it turned out delicious!!

melt butter, sugar & vanilla extract together...

slowly whisk in egg yolks & evaporated milk...

stir in cornstarch and bring to a boil to thicken...

measure chopped pecans...

sweetened, flaked coconut...

then take boiled mixture off the stove & stir in pecans & coconut...

until it's thick, like this!

Sweetheart's Story

Last week we were notified of a greyhound suffering from severe animal abuse in a nearby Animal Shelter. We weren't sure if she was strong enough to make it, as she was in terrible condition and weighed only 31 lbs. FASThound of Seminole, OK made the call that she had the will to live and they had the resources to save her, and now she is in their care and doing better and better every day! Thank you so much to FASThound for caring for this sweet girl and spreading the word about her amazing strength and will to live. In light of her beautiful personality, she has been named Sweetheart. They have started a blog to share her story and update everyone on her rehabilitation as it progresses.

Please share this with everyone you know so people are aware of the need for donations and support for FASThound rescue. Please visit their website to donate to her care. Every dollar helps Sweetheart's road to recovery.

today we had the chance to talk with fox 25 and they got some great footage of our doggies running and playing in the backyard! the segment will be on the 9:00 news on fox tomorrow night (october 23) -- so tune in and look for cami and calvin! cami has her zebra collar on and calvin has is blue and brown striped collar on. hopefully they make it big time! :)

previously, i posted these pics of our foster dog. well, he is now our family member. :)

we decided to adopt calvin (formerly leland) today and we are so happy! he fits in so well at the house and with the other dogs & cat and we are so excited to have another grey in the family! they are such wonderful dogs. if you are ever looking for the perfect family pet, you should definitely look into rescuing a retired racer. they have such sweet, gentle dispositions and make excellent family members!

hot spiced cider

8 cups (2 qt. bottle) apple cider
4 cups (1 qt.) cranberry juice cocktail
4 whole cloves
3 cinnamon sticks
peel of 1 small orange
dark rum (optional)

bring everything (except rum) to a boil. drop the heat to low and simmer for 35 minutes. fish out the cloves, cinnamon sticks & orange peel before serving. if you want to make this an alcoholic cider, add 2 tbsp. dark rum to each mug before you fill it up with cider.

the greyhound adoption group had a garage sale on saturday, so i made these cookies for them to sell. the entire garage sale ended up netting about $1250... all of which went directly to funding vet bills, food & care for the dogs. what a fabulous success!

every time i make rolled sugar cookies i vow to never make them again. give it a week... i still have about a pound of dough left! any suggestions?

broccoli cheese potatoes au gratin

i love experimenting! you know those boxes of au gratin potatoes that cost, like, $.98? well i had one of those and it just wasn't enough.... butturned out as a really good side with a couple additions from the pantry/freezer! and it made way more than just the potatoes would.

1 box au gratin potatoes (and milk, margarine, etc... whatever it calls for)

2 cups frozen broccoli

1/4 cup seasoned bread crumbs

1/4 cup grated parmesan cheese

prepare potatoes as instructed in box, but add 2 cups frozen broccoli to the mix. bake as instructed. make a mixture of the bread crumbs and parmesan cheese and sprinkle on top for the last 5 minutes of baking or so. or you can just broil it for a couple minutes... that's what i did since i didn't even think of the topping until it was pretty much done. :)

a "moving in together" cake!

last month BOk had an online auction where all the proceeds went to united way. i donated a cake and the highest bidder got a custom cake for a special occasion. the girl that won wanted to give a cake to her boyfriend to celebrate them moving in together -- what a cute idea! this is definitely one of my favorite cakes!

rice krispie treat cake!

for my boss's birthday this year i thought i'd put a fun spin on an old favorite. so, i made rice krispie treats and pressed them into a 10" springform pan while they were still warm.

rice krispie treats:

12 cups rice krispies (1 lg. box is enough)
6 tb. butter
1/2 tsp. salt
20 oz. mini marshmallows

melt butter & salt together in a large saucepan. stir in marshmallows over low heat until completely melted into butter. pour in rice krispies & stir until combined. press into greased springform pan while still warm. i had to spray the back of a spoon with nonstick spray in order to press them in without making a huge mess. allow them to cool.

meanwhile, i made up a quick batch of chocolate ganache.

chocolate ganache:

3 cups chocolate chips (a mixture of milk chocolate & semi-sweet is best)
2 cups heavy cream
1 tsp. pure vanilla extract

melt together in a double boiler until completely combined. remove from heat, add vanilla and let cool to pourable consistency in the fridge. (about 45 minutes.) pour over cake and smooth over edges. i did this over a cookie rack with foil underneath to catch any drips.

you would never know there are krispie treats inside! i can't wait to cut into it tomorrow.

homemade blueberry muffins.

1/2 c. old fashioned oats
1/2 c. orange juice
1 large egg
1/2 c. canola oil
1/2 c. sugar
1-1/2 c. all-purpose flour
1-1/4 tsp. baking powder
1/2 tsp salt
1/4 tsp. baking soda
1/2 pint (1 cup) fresh blueberries
cinnamon & sugar to sprinkle on top

preheat oven to 400. in a large bowl, combine orange juice and oats and let sit for 5 minutes. meanwhile, combine dry ingredients (flour, baking powder & soda, salt) and set aside. beat the oil, egg and sugar into the oat/oj mixture until combined. mix in the dry ingredients until it has just come together (don't overmix.) gently fold in the blueberries. line a 12-ct muffin tin with papers and fill each 3/4 full. this makes exactly 12 muffins. sprinkle the tops with cinnamon & sugar and bake for 20 minutes. let cool 5 minutes before serving.
